Harvest: all the grapes are manually harvested in cases. 

Vinification: the Fernanda grapes, are placed in a refrigerated room. They are frozen to  -10/12° before pressing, so as to capture the aromas as much as possible. The temperature is then put back to 0° and the grapes are pressed with their stalks. The epithelium cells are broken down by the freezing of the skins. with a consequent releasing of the typical notes of this variety. For the Trebbiano and the Garganega grapes instead we do a more traditional vinification. After a static clarification, the musts are fermented at about 16° for about two weeks and the malolactic fermentation is prevented. After the end of the fermentation the wine is moved and remains in contact with the fine lees until June/July, when the cuveè is created. Then the wine is bottled and is released after two years.
